Roasted Veggies & Bean Tostadas

My favorite food has to be Mexican inspired food. I could live, eat & breath this type of food! It is a little embarrassing, but I could wake up in the morning and make a taco smothered in salsa. Yum, such great simple flavors that burst in your mouth.

I have provided you with a recipe that will satisfy your fiesta needs with a twist.

Roasted Vegetable & Bean Tostada

2 zucchini thinly sliced

10 ounces mushrooms

2 bell peppers cut into 1 ½ inch pieces

2 tablespoons olive oil

8 corn tortillas

1 15 ounce can refried beans

4 ounces grated cheddar cheese

**optional – sour cream, cilantro, salsa, guacamole**

* Pre heat oven to 450. Grab 2 baking sheets and add vegetables to the sheets, already have been tossed in olive oil & salt. Roast for 20-25 minutes rotating veggies once. Transfer to bowl.

* Place tortillas on baking sheet. Brush with olive oil, spread with beans and sprinkle with cheese. Bake for about 5-7 minutes.

* Top with veggies and your optional toppings above

* Devour!
